Tapioca pearl is the most-loved topping in bubble tea. It often called ‘boba’, ‘bubble’, ‘black ball’ and ‘black pearl’. It is soft and chewy, which is perfect to go with milk tea and fruit tea.
Pearls is made from tapioca, which is a gluten-free starch extracted from the root of a cassava plant. Cooked pearls on their own are chewy but relatively flavourless. They become much sweeter after being soaked in simple syrup. But the main flavour comes from the drink itself, the pearls are add-ons to give more textures.
Cooking is required to serve the tapioca pearls, but preparations are straightforward. You can also make bubble tea at home!
